College Life 101


Aw...the College Life ! We all have our different experiences of college. Some love it, some didn't. Some make life time friends and great memories. I remember you get to go to an R-rated movie. turning the "Big 21" or frequent a college student’s survival staple – Happy Hour. I remember Taco Tuesday's at the local bar where you could buy one drink and eat dinner for free! And biggest college worry – mid-terms and finals. Aw... the fabric of college life.
  My daughters both got to experience the College Life in the dorms and leasing an apartment and sharing with room mates. I on the other hand did not, I was a commuter. So when my daughter, Dana came home this year,  she's a Graduate you know ! She shared with us her 6 ingredients for enchiladas, that she made for her roommates. We had one of those busy days, then you suddenly are hungry...it's 6 o'clock ? and your soooo hungry ! What are we having for dinner?
Enchiladas !?! well...my favorite recipe calls for some ingredients we didn't have on hand, and we didn't feel like trudging to the grocery store. So she offered to make her version of Enchiladas ! What a smart  creative girl we have !
It was so easy and mighty tasty !  Hope you try this when your wondering...What's for dinner !?! So keep these ingredients on hand, then you won't be without a quick meal to fix up. OLE' ! and Enjoy !

Ingredients:
 Las Palmas Green Enchilada Sauce *Green type in  large can
Sour Cream, small carton
Cooked Chicken, cubed about 2 cups
Corn Tortillas, whole
Monterey Jack Cheese, 1 to 2 cups grated
Diced Green Chilies, one small can

optional toppings : olives, onions , extra cheese

Using a skillet, with low heat, warm each tortilla. Layer with Enchilada Sauce, Sour Cream, Cooked Chicken, Corn Tortilla (using it whole & cutting  in half to fit sides of pan), Cheese, and Green Chilies.top with Green Chilies. Bake at 350 degrees for 30 minutes.
